The Story

Grilling culture in Greece is inherently relaxed and groovy. Forget about gas grills, fancy technique, or complicated ingredients lists. More often than not, all it takes is a fire, a ton of olive oil and lemon, some garlic, and some herbs to transform meat and seafood into party-worthy fare. Lemon chicken is the name of several dishes found in cuisines around the world which include chicken and lemon. A version of lemon chicken popular in Australasia involves coating the chicken in batter, frying it and then covering the chicken with a lemon sauce.

Ingredients
Adjust Quanities

whole chicken, flattened or chicken pieces,skin on and bone in
6 tbsp (18 Teaspoons) extra virgin olive oil
4 large garlic cloves, minced
1 tsp dried thyme
½ tsp dried oregano
1¼ tsp salt
½ tsp freshly ground black pepper
1½ tsp lemon zest, from one lemon

Method

  1. One at a time, place the chicken in a large zip-lock bag.
  2. Mix all of the ingredients together . Add the marinade to the bag and massage the marinade into the meat until evenly coated. Seal the bag and place in a bowl in the refrigerator; let the chicken marinate for at least 4 hours or overnight.
  3. Preheat the grill to 150 degrees C. Place the chicken on indirect heat. Grill untill the skin is light brown. Test to see if the chicken is done by cutting into the chicken with a sharp knife. If it's still red close to the bone, continue grilling a few more minutes.
  4. Turn the heat to high and grill the chicken over very high heat until the skin is nice and crispy.
