Biryani – that delicious Indian dish consisting of rice flavoured with spices and layered with either lamb, chicken, fish or vegetables and a thick gravy. Make your own birhani spice mix at home.

The Story

Its origins are traced to the Persian traders who left behind not only biryani but a variation of kababs and Indian breads. In Bhatkali biryani, the meat is cooked in an onion and green chili based masala and layered with fragrant rice.

Ingredients
Adjust Quanities

¼ cup (12 Teaspoons) coriander seeds
2 tbsp (6 Teaspoons) cumin seeds
2 dry bay leaves
cinnamon stick
10 cloves
1 tbsp (3 Teaspoons) peppercorns
7 pods green cardamom
2 tbsp (6 Teaspoons) fried onion
1 tsp turmeric
2 tsp cayenne
1 tsp dry pomegranate seeds (anardana) (optional)
4 dry plums (chopped into smaller pieces) (optional)

Method

  1. Place all the ingredients except the plums in a spice grinder or a blender. Process into an even but coarse powder.
  2. Mix in the plums and store in an airtight jar, in the refrigerator or in a cool, dark place in your pantry or kitchen.
