Ingredients
Adjust Quanities

4 chicken thighs
100 ml soy sauce
50 ml shaoxinwine
50 ml rice vinegar
2 cloves of garlic
1 chilli pepper
20 g ginger
1 tbsp (3 Teaspoons) of sichuan pepper corns
10 g orange zest
1 tbsp (3 Teaspoons) of sugar
10 g spring onions
salt
pepper

Method

  • First, marinade the thighs with soy sauce and Shaoxing wine (60 ml/ 2 fl oz). Next, add rice vinegar (2 tbsp), and season with salt (1 tsp) and pepper (1/2 tsp). Leave to marinade up to 2 hours.
  • Then, chop garlic (2 cloves), chilli (2) and ginger (2 cm/ 0.8 in).
  • Add olive oil (2 tbsp) to a hot pan. Put garlic and chilli mixture into the pan. Cook until softened.
  • Add Sichuan peppercorns (2 tsp) and orange zest (2 tsp).
  • Next add the marinated chicken thighs along with a marinade.
  • Then, throw a pinch of sugar (1 tsp) and fry the chicken until it is lovely and brown and the sauce is deliciously thick.
  • Finish with chopped spring onions (2). Drizzle a bit a soy sauce (2 tsp) and a few drops of sesame seed oil (2 tsp).
