  1. Preheat oven to 220C / 425F / 200C fan forced (Gas Mark 7). Line a baking tray with baking paper.
  2. Cut wings at joints to separate. Discard the wing tips. Pat the rest dry with paper towel and place in a bowl. Sprinkle over baking powder and salt and give them a good mix so they are all coated.
  3. Space out on the baking tray and place in the oven for 35-45 minutes until golden and crispy.
  4. While the chicken is cooking, add the sauce ingredients to a medium saucepan. Place over medium heat and bring to a simmer while stirring. Simmer for 4-5 minutes until thickened.
  5. Once the chicken wings are ready, toss them in the BBQ sauce until well coated. Tip them back out onto the baking tray and bake for another 10 minutes.

 

1 kg chicken wings
1½ tsp baking powder
½ tsp salt
¾ cup (36 Teaspoons) tomato ketchup
1 tbsp (3 Teaspoons) apple cider vinegar
1 tbsp (3 Teaspoons) maple syrup
½ tbsp (1.5 Teaspoons) brown sugar
1 tbsp (3 Teaspoons) worcestershire sauce
1 clove garlic, crushed
½ tsp paprika
½ tsp mustard powder
½ tsp salt
