The Story

Multigrain bread is a type of bread prepared with two or more types of grain. Grains used include barley, flax, millet, oats, wheat, and whole-wheat flour, among others. Some varieties include edible seeds in their preparation, such as flaxseed, quinoa, pumpkin seeds, and sunflower seeds.Rye and sourdough multigrain breads are additional varieties. Preparations include 7-grain and 9-grain bread, among others. Multigrain bread may be prepared using whole, unprocessed grains, although commercial varieties do not necessarily always contain whole grains.

Ingredients
Adjust Quanities

310 g nutty wheat flour
340 g cake flour
1 tsp salt
1 tbsp (3 Teaspoons) brown sugar
10 g packet dried yeast
1 tbsp (3 Teaspoons) sunflower oil
500 ml lukewarm water
1 egg, lightly beaten
1 tbsp (3 Teaspoons) mixed seeds


Method

  1. In a large bowl, mix the nutty wheat, cake flour, salt, sugar and yeast together.
  2. Make a well in the center and add the oil.
  3. Add enough of the warm water to form a soft dough.
  4. Spoon the dough into a loaf pan lined with baking paper and greased.
  5. Leave to rise in a warm place until the dough has doubled in size.
  6. Brush the top of the loaf very lightly with the egg and sprinkle with the seeds.
  7. Bake in a preheated oven at 180 °C for 1 hour or until a skewer, when inserted in the centre of the loaf, comes out clean.
  8. Remove from the oven and allow to cool.
