How to dry fruit at home

Summertime brings with it an abundance of fresh and juicy peaches and plums. But what to do when the season ends and you're left with a surplus of fruit?

Method

  1. Choose your fruit: Select ripe and fresh fruits that are in season for the best flavor and texture. Apples, bananas, berries, figs, and pears are all great options.

  2. Prep your fruit: Wash your fruit and slice it into uniform pieces. Remove any stems, pits, or seeds.

  3. Preheat your oven: Set your oven to its lowest temperature (usually around 140-170°F or 60-75°C).

  4. Arrange your fruit: Place the fruit slices in a single layer on a baking sheet lined with parchment paper or a silicone mat. Make sure the slices do not overlap to ensure even drying.

  5. Dry your fruit: Place the baking sheet in the oven and leave the oven door slightly open to allow for airflow. Check your fruit periodically, flipping the slices over and rotating the baking sheet if needed. Drying time can range from 4 to 12 hours depending on the fruit and your oven temperature.

  6. Test for doneness: Fruit is done when it is dry and leathery with no moisture left. To test for doneness, remove a slice from the oven and let it cool for a few minutes. Press the fruit gently with your finger - if it's dry and leathery with no moisture left, it's done.

  7. Store your fruit: Once your fruit is dry, let it cool completely and store it in an airtight container.
